Nogle gange kan Barossa-shiraz være så tyk, at man kan skære den i skiver. Giles og Fergal vil have friskheden og elegancen tilbage og lader klaserne vildgære i hel tilstand med en forholdsvis kort fadlagring efterfølgende. Det giver hindbæreleksir med rosmarin, salvie og smuk blødhed. Den ekstremt stenede og mineralholdige jord giver klar mineralitet. 93 point hos Suckling.
Thistledown er ikke bare endnu et vinhus. Det er som at finde ud af, at to mekanikere har gået i en garage og puslet med en bil, der kan køre fra Ferrari. Med andre ord (kunst)håndværk i den helt vilde mesterklasse. Håndplukket og håndlavet af de allerbedste druer, vildgæret i hele klaser og uden industrielle tilsætninger. To Masters of Wine, Giles og Fergal, står for driften og de styrer benhårdt efter friskhed, terroir og good old Aussie juiciness. Vinene er ikke i hverdagsprislejet, men stadig regulære kup i deres liga.

Cool fragrance of dried flowers, sage and thyme, black fruit and spice. It’s kind of juicy in the blackcurrant and blackberry department, with well-knit tannin giving a confident but gentle grip, fresh feel, and a long and subtly mentholated peppery finish. Very nice. You could well crave it fortnightly.
